In a large saute pan, heat sausages until fully cooked through (about 10 minutes) set aside to cool
In another saute pan, heat grape seed oil until hot. Add red onion and cook until softened
Add red, yellow and orange peppers to pan. Cook until soft (about 5 minutes)
Add salt, pepper & roasted garlic to taste
Heat tortillas on grill or in skillet until soft & warm
Slice sausage on bias
Place 2 tortillas on each plate
Place sausage slices on tortilla - lengthwise (about 5)
Top with bell pepper & onion mixture
Add sliced radish and shredded cabbages
Drizzle with desired amount of salsa, and garnish with cilantro, queso fresco & squeeze of lime
