1lb Richard's Premium Boudin - removed from casing
2 cups cooked brown rice (warm)
1/4 cup finely diced green onions
1 egg - whisked
1 cup plain breadcrumbs
Directions
Preheat oven to 400F
Place breadcrumbs in small bowl
In larger bowl, mix together the boudin, brown rice and green onion until nicely blended
Mix in the whisked egg
Form tablespoon-sized balls, then roll in breadcrumbs until coated and place them on a lined baking sheet
Bake in oven for about 20 minutes, or until nicely browned and cooked through
Let Boudin Balls cool for 8-10 minutes before serving. Serve with Honey Mustard Sauce

Whisk mustard & honey together and place in small serving bowl
