Richard’s Baked Cajun Oysters

Yield: 12 oysters on the half shell

Ingredients

  • 12 oysters, chucked, on the half shell
  • 2 Tbs unsalted butter
  • 2 garlic cloves, minced
  • 1 Tbs Richard's Cajun seasoning
  • 1/2 cup panko bread crumbs
  • 1/4 cup grated parmesan cheese
  • 3 Tbs minced parsley
  • rock salt
  • lemon wedges - for garnish

Directions

  1. Preheat oven to 450 degrees
  2. Sprinkle a thin layer of rock salt on a baking sheet to keep oysters in place
  3. Prepare oysters and place on baking sheet
  4. Melt butter in a skillet over medium heat. Stir in Cajun seasoning and infuse with butter
  5. Add garlic and sautee for 2 minutes until soft. Remove from heat and set aside
  6. In a small mixing bowl, add the breadcrumbs, parmesan cheese, parsley & mix together
  7. Slowly add in the Cajun butter mixture and combine
  8. Place a heaping spoonful of the breadcrumb mixture on top of each oyster
  9. Bake in a preheated oven at 450 degrees for 10-12 minutes until the top is golden
  10. Remove from oven and serve with lemon wedges
